Yields: 30 cookies
1. Stir flour, soda, and salt together in a small mixing bowl. Set aside.
2. In a mixing bowl, combine egg and vanilla. Beat together using an electric mixer until frothy, about 20 seconds.
3. Add margarine, peanut butter, brown sugar, and apple juice concentrate to egg mixture.
4. Blend ingredients together on medium until well mixed, about 1 minute. Push batter from sides with a rubber spatula.
5. Add flour mixture to batter.
6. Blend together until dough forms, about 30 seconds to 1 minute. Chill dough for at least 2 hours.
7. Preheat oven to 325 F. Coat 2 baking sheets with nonstick vegetable cooking spray.
8. Roll dough into small balls. Place sugar in a shallow dish. Lightly roll each dough ball in sugar.
9. Place balls 1 1/2 inches apart on prepared baking sheet.
